Celebrate under the fireworks with these Patriotic Berry Popsicles
This is a super easy and tasty recipe to make ahead and serve on Independence Day as you enjoy the fireworks. I know you can buy the red, white and blue popsicles at the market but there are better and healthier options that we can prepare at home.
These Patriotic Berry Popsicles from my Passionista Kitchen are creamy, sweet and refreshing on a hot 4th of July in Texas. I enjoy cooling off on most evenings with a delicious popsicle that only takes a little bit of time to put together. Happy Independence Day!
INGREDIENTS
• 2 cups of coconut milk – canned or refrigerated is perfect
• 1 teaspoon vanilla extract
• 4 tablespoons of honey or more if you want them sweeter
• ¼ cup sliced strawberries
• ¼ cup blueberries
• ¼ cup raspberries
In a large measuring cup or a bowl that has a spout for easy pouring, combine coconut milk, vanilla extract and honey. Mix until honey is dissolved.
In another bowl combine all berries and distribute among 8 popsicle molds or you can use small plastic cups.
Top with coconut milk mixture. Place popsicle mold tops or wooden popsicle stick if using plastic cups, in the middle of each pop. Put in freezer and freeze for about 5 hour or overnight.
To unmold, place pops in a hot water bath for a few seconds to loosen up. You can do this by pouring about ¼ cup of hot water into a mug and dip the pops into it. Remove from mold and enjoy!
